How can Israel occupy area that they won in war?

On the news, especially recently, people are talking about Israel "occupying" area of Palestine, Egypt, and Syria. But I have a quest that I can seem to answer. If Israel are occupying these areas after they won it in a war (especially a war they did not start), how are they "occupying" it instead of it just being theirs?
